Rice is one of the most popular starch dishes we eat as Zimbabweans. It’s therefore good to spice it up a little every now and then so there’s variety with your meals. This here is a lightly curried version. The kids loved it and so did everyone who ate it!

Resources/Equipment You Will Need

  • Good sized pot
  • Sharp knife
  • Chopping board
  • Wooden spoon

  1. Get your ingredients together. These include; 2 cups rice; 2 tsp finely chopped garlic; 1/2 small onion, finely chopped; 3 tsp curry powder; 3 1/2 cups water; 1/2 cup raisins; 1 tsp salt; 1/4 cup finely chopped green pepper; 1/4 cup finely chopped red pepper and 3 tbsp cooking oil.
  2.  Rinse the rice and set aside in a bowl.
  3. Heat oil in pot. Add the garlic, onion and curry powder. Fry for 2 min.
  4. Add the rice and fry for another 2 min, stirring regularly.
  5. Add water and salt. Bring to the boil then reduce the heat by a notch until the water is no longer visible.
  6. At this point, reduce the heat by a notch down again. Allow the rice to simmer until all the water is gone.
  7. Fluff up the rice then add raisins, green and red peppers. Mix gently with the fork until evenly incorporated. Enjoy!
