Flourless Banana mini pancakes

makes 15 Servings ~ 3 minutes
  • 1 Large banana
  • 2 medium eggs
  • a few drops lemon juice
  • pure vegetable oil for frying

This has to be the easiest “pancake” recipe ever! A friend of mine shared this with me and at first I was a bit skeptical to try it out, because I mean, it has no sugar, no flour, no milk, just two ingredients- banana and eggs! The taste was great, my family loved them including my 1 year old daughter. So if you have any toddlers, here’s one more thing to add to their eating plan. There are great nutrients, minerals and vitamins to be gained from the banana as well as protein from the eggs. You will need to use a LARGE banana for this. Don’t use the small ones.

Quick Instructions

  1. Gather your ingredients together. Dice up your banana (1 large banana), put it in a bowl and mash it up using a fork. Beat the eggs (2 medium eggs).
  2. Add a few drops of lemon juice to the bananas to enhance their flavour as well as prevent them from discolouring. Pour the beaten eggs into the mashed banana. Mix well. Heat oil in pan, use a tablespoon to spoon the batter into the pan. Flip the mini pancakes over after about 30-45sec and allow the other side to cook and become golden brown for roughly the same amount of time. And you’re done! Repeat process until pancake batter is finished.

Step-1

You can serve this with a honey drizzle or with a dollop of whipped fresh cream or with fresh fruit at breakfast. You can enjoy them warm or cold. Try them out and let me know how it goes.
