Mupunga unedovi (Peanut Butter Rice)

  • 3 cups rice
  • 6 cups water + extra for when mixing
  • 1 tsp salt
  • 5 tbsp smooth peanut butter

Peanut butter rice is one of my favourite dishes to prepare and eat of course!! My family also love it. It has become one of our traditional foods as it has been around for some decades now. The best thing about it is that you can serve it with just about anything. Here I served with beef stew and leafy greens. This here is my version 2 of preparing it, if you want a more solid and intact end results that almost resembles Sadza. My version 1 can be found here.

Equipment

  • Medium sized pot/ saucepan
  • Wooden spoon
  • Tablespoon

 

Instructions

  1. Get your ingredients together. These include; 3 cups rice
    6 cups water + extra for when mixing
    1 tsp salt
    5 tbsp smooth peanut butter
  2. Put your rice in a pot. Add the water. (If you want it to cook quicker you may use boiling water). Add salt and bring to a rapid boil then reduce the heat.
  3. As the water is getting less in the pot, continue to reduce the heat by a notch.
  4. Add the peanut butter in batches, together with a little bit of hot water  and mix with your wooden spoon as you would do when you’re preparing sadza. (In Shona we call this kumona)
  5. Repeat process until the rice has been completely mixed with the peanut butter. (Tip: Each time the wooden spoon feels too heavy to move whilst mixing, add a bit of hot water and mix.)
  6. Let it simmer for 5 min. Enjoy with your favourite relish!
