- 500g shelled round nuts
- 200g shelled ground nuts
- 2 tsp salt
Mutakura is one of Zimbabwe’s good old nutritious and filling snacks. This version here has just round nuts and peanuts. I’m personally not a fan of round nuts (but my better-half is) so version 2 still stands as my favourite! Let’s get straight to it. The soaking is overnight helps to cut out on cooking time as well as makes the nuts a bit “bigger” in size.
- Have your peanuts (200g) and round nuts (500g) ready. Put the round nuts in the pot you will use to prepare the mutakura in. Pour some water and make sure the pot contents are covered completely. Let them soak overnight. Do the same thing for the peanuts.
- After the soaking, drain the water from the nuts. Add fresh water and salt (1 tsp). Boil for 45 minutes, or until the nuts are getting tender.
- After 45 minutes, drain the peanuts, add them to the pot with round nuts. Top up the water, add salt (1 tsp) and boil for another 45 minutes or until you get the texture you want for the peanuts. Taste for seasoning and adjust accordingly. You’re done, enjoy!
