Get This

  • 1kg super goat meat

  • 1 tsp Zimspice mild curry powder

  • 3 tbsp oil

  • 1 tsp salt

  • 1 tbsp finely grated garlic

  • 50 ml Mr Sauce lemon juice

  • 1 medium onion, chopped

  • 3 medium tomatoes, grated

  • 100 ml Mr Sauce BBQ sauce

  • 1 chicken stock cube

  • 400 ml water

  • ½ tbsp plain flour and enough water to make a paste (optional)

Do This

  •  Get your ingredients together. Cut the meat into medium-sized pieces and season with salt, curry powder, and garlic. Rub gently to ensure the meat is evenly seasoned
  • Heat oil in a pot on medium-high heat. Add the meat and fry until browned. Add the lemon juice to deglaze the pot as you fry.
  • Add the onion and fry for about 2 – 3 minutes. Add the tomatoes, stock cube, and BBQ sauce. Allow to cook for 5 minutes, stirring regularly.
  • Add the water, bring to a boil then reduce heat to a gentle simmer until the meat is tender and cooked through.
  • If the stew is not thick enough for your liking, you may add the water and flour mixture whilst stirring simultaneously. Allow the stew to simmer for a further 5 minutes. Taste for seasoning and adjust accordingly.  Enjoy!

Recipe Notes

  • Deglazing is when you use a liquid to “lift” the brown bits of food that stick to the pot as you fry.
  • Using the lemon juice to deglaze helps to heighten the flavours in the dish as well as tenderize the meat further.
  • Use ingredient brands available to you if you have no immediate access to the ones mentioned.
