Soy and Orange Roast Chicken

  • 1.8 kg whole chicken
  • 1 1/2 tsp salt
  • 1 tbsp honey
  • 2 tbsp Mr Sauce Soy Sauce
  • 4 tbsp freshly squeezed orange juice
  • 1 tsp finely minced garlic
  • Rind of 1 orange

If you’re looking for a simple whole chicken recipe that’ll produce a chicken that’s nice and crispy on the outside whilst being juicy, and moist on the inside then this is it right here! Let’s not forget this all adds up to being delicious! The secret to achieving this is basting, which is simply put brushing or pouring a liquid over meat whilst it’s cooking in order to keep it nice and moist on the inside. This is mostly applicable to dry heat cooking methods such as grilling/roasting and braaing.

So in this recipe I am taking Mr Sauce’s Soy Sauce on a spin. What I like most about it is that, compared to other soy sauces in the market, it has a significantly low amount of sodium. Yeah that thing called salt. All ends of the earth know that too much salt in one’s diet has adverse health effects. So I tip my hat, give big thumbs up and a high-five to Efoods Zimbabwe for this relief. In fact, all their sauces I have used so far in my recipes have not disappointed. So the Mr Sauce soy sauce pairs really well with the citrus flavour of the orange, not forgetting the honey and garlic that I used in this recipe creating a harmony of flavours which you will taste with each bite of the chicken. oh Yum!

Serve this with your preferred side, which could be fries, a salad, rice, roast potatoes…the options are limitless if the truth be told.

P/s least somebody be left behind, orange rind is just the grated skin of an orange. Enjoy!

Do This

  1. Get your ingredients together. You may cut the chicken into a spatchcock (butterfly) as I did by simply removing the back bone. Or if you wish, you may just leave the chicken whole (or even use portions if you prefer that). Season the chicken with salt and roast it in the oven at 180 degrees Celsius for 10 minutes.
  2. In the meantime, put the rest of the ingredients into a bowl and give a good mix. After 10 minutes, remove the chicken from the oven and brush it generously with some of the soy and orange mixture. (This is what’s called basting). Return chicken to the oven and roast for about 15 minutes.
  3. Repeat process every 15 min until chicken is well done and cooked through. Enjoy!
